The honey was harvested in 2025 on our small hobby farm located near Spencer in Finger Lakes region. The area in known for very clean ecology and abundance of natural habitat suitable for beekeeping. We separate spring, summer and fall type of honey by harvesting approximately every 4 weeks during season. The frequent harvesting results in purity, recognizable taste and flavor for each type of honey that depends on plants flowering at certain period of time.
Spring honey: usually of a light color and sweet delicate taste, sometimes with pronounced aroma of Russian olive or dandelion.
Summer honey is based on a variety of wild flowers such as white clover, raspberry, milkweed, sunflower, basswood and what else in flowering on the nearby fields and in the woods. The honey is of a bright amber color with slightly different hues depending on the source. It has a stronger aroma and higher acidity with a tendency to stay in liquid form longer than other types.
Fall honey is based on late-season blooms like goldenrod, asters, Japanese knotweed and others. Usually it is rich, robust, and complex, with a darker color and deep flavor.
Exception is the pure goldenrod honey, which has a light color and a very distinct aroma.
